Potato Salad

Ingredients

• 2 eggs slightly beaten
• 12 c sugar
• 1 tsp dry mustard
• 1 Tbsp cornstarch
• 12 tsp salt
• 14 c vinegar
• 34 c water
• 1 c mayonnaise
• 14 c parsley
• 6 hard-cooked eggs
• 6 large potatoes cooked
• 14 c diced onion
• 1 12 tsp salt
• 1 14 tsp pepper

Directions

1. Cook first 7 ingredients over low heat until thick
2. Add mayonnaise parsley diced potatoes and onions
3. Salt and pepper to taste
