Peanut Brittle

Ingredients
- 1 12 c raw shelled peanuts skins on
- 1 c granulated sugar
- 12 c light corn syrup
- 18 tsp salt optional
- 1 tsp butter
- 1 tsp vanilla extract
- 1 tsp baking soda
Directions
- Combine peanuts sugar syrup and salt in a 1 12 quart microwave safe container
- Microwave 4 minutes on high in a 700 watt microwave oven
- Stir microwave 4 minutes longer
- Stir in butter and vanilla
- Microwave 2 more minutes on high
- Add baking soda and quickly stir until light and foamy
- Immediately pour onto lightly greased baking sheet
- Spread to 14 inch thickness
- When cool break into pieces
- Store in air tight container
