Fresh Coconut Cake

Ingredients
- 1 c. butter
- 1 c. sugar
- 3 1/2 c. flour (regular plain)
- 3 1/2 tsp. baking powder
- 1 c. milk
- 8 egg whites, beaten
- 1/2 tsp. vanilla
- 1/2 tsp. lemon extract
Directions
- Cream butter; add sugar gradually, continuing to cream well. Combine flour and baking powder.
- Sift together and add to creamed mixture alternately with milk. Beat egg whites until stiff but not dry.
- Fold into creamed mixture.
- Add flavoring.
- Bake in 3 (9-inch) pans which have been greased and floured or lined with wax paper.
- The oven should be 350° oven for 30 to 35 minutes. Makes 3 (9-inch) layers.
