Date Filled Cookies

Ingredients

• 1 box dates or 2 c cut in pieces
• 1 c water
• 1 c sugar
• 2 Tbsp lemon juice
• 1 c Crisco shortening
• 1 12 c brown sugar
• 2 eggs
• 3 c flour sifted
• 1 tsp cream of tartar
• 1 tsp soda
• 1 tsp salt
• 1 12 c rolled oats
• 1 Tbsp hot water
• 1 tsp vanilla

Directions

1. Combine dates 1 cup water sugar and lemon juice
2. Cook until thick then cool
3. While date mixture cools make cookie dough
