Cucumber Soup

Ingredients

  • 2 medium cucumbers
  • 14 c buttermilk
  • 1 tsp salt
  • 18 tsp pepper
  • 1 Tbsp finely minced onion
  • 2 c buttermilk

Directions

  1. Pare 1 cucumber
  2. Cut both into slices reserve 6 slices for garnish refrigerate wrapped
  3. Pour 14 cup buttermilk and 12 cucumber slices into blender beat until smooth add remaining slices salt pepper and onion
  4. Beat until smooth
  5. Stir in remaining buttermilk
  6. Cover and refrigerate at least 2 hours or very cold
  7. Serves 6 to 8
  8. Add garnishes before serving
  9. Cut up chives may also serves as garnishes
