Crabmeat Au Gratin

Ingredients

  • 1 medium onion chopped
  • 6 green onions chopped
  • 2 ribs celery chopped
  • 1 stick butter
  • 4 Tbsp flour
  • salt and pepper to taste
  • 1 large can evaporated milk
  • 1 c low-fat milk
  • 2 egg yolks beaten
  • 2 lb white crabmeat
  • 1 12 c grated Cheddar cheese

Directions

  1. Saute onion and celery in butter until soft
  2. Add flour and blend
  3. Add milk and blend
  4. Remove from heat
  5. Add egg yolks crabmeat salt pepper and cheese
  6. Put in a casserole and top with cheese
  7. Bake at 350 for 20 to 30 minutes
  8. Makes 8 servings
