Coconut Pie

Ingredients

  • 1 stick margarine melted
  • 1 14 oz pkg flaked coconut
  • 2 eggs
  • 1 tsp cornstarch
  • 1 c sugar
  • 1 tsp vanilla
  • 1 12 c milk
  • 2 regular 8-inch or 1 deep dish 9-inch unbaked pie shell

Directions

  1. Mix together the sugar and cornstarch
  2. Add the eggs margarine 1 34 cups coconut 1 14 cups of milk and vanilla Stir well
  3. Pour mixture into pie shells
  4. Add additional milk and coconut sprinkle over and gently mash down into mixture to finish filling the shells to 34-inch from the top
  5. Bake at 325 for 45 minutes or until golden brown
